Fresh noodles with botargo and fine caviar Osetra

  • Fresh noodles
  • Tuna Botargo
  • Osetra Fine Caviar
  • Butter
  • EVO oil
  • Garlic
  • Prezzemolo

Preparation

  1. In a large frying pan, melt a knob of butter along with a drizzle of EVO olive oil.
  2. Add the parsley stalks and a clove of poached garlic to perfume the oil.
  3. Let them season over low heat, being careful not to burn the garlic.
  4. Cook fresh noodles in plenty of salted water for a few minutes, until they reach the right al dente consistency.
  5. Drain the noodles and transfer them directly to the pan with the prepared sauce.
  6. Salt them gently to let them season and blend well with the oil and butter.
  7. Mold the noodles carefully. Grate plenty of roe on top of the noodles.

  9. Add a drizzle of raw EVO olive oil to enhance the flavor, then top the dish with a small amount of Osetra caviar.
