Fresh noodles with botargo and fine caviar Osetra

Ingredients
- Fresh noodles
- Tuna Botargo
- Osetra Fine Caviar
- Butter
- EVO oil
- Garlic
- Prezzemolo
Preparation
- In a large frying pan, melt a knob of butter along with a drizzle of EVO olive oil.
- Add the parsley stalks and a clove of poached garlic to perfume the oil.
- Let them season over low heat, being careful not to burn the garlic.
- Cook fresh noodles in plenty of salted water for a few minutes, until they reach the right al dente consistency.
- Drain the noodles and transfer them directly to the pan with the prepared sauce.
- Salt them gently to let them season and blend well with the oil and butter.
- Mold the noodles carefully. Grate plenty of roe on top of the noodles. .
- Add a drizzle of raw EVO olive oil to enhance the flavor, then top the dish with a small amount of Osetra caviar.
